Roger that Brooks, thanks!
I've forwarded this onto my mechanic in case he needed something. He's a meticulous ex Marine aircraft mechanic and repairs a lot of vintage and new aircraft.
I've taken as many photos as I can of this project so I can document how to replace the windscreen and how to remove the rudder pedals and any other sundries I can add for us.Still TONS more to learn!

I used
this product
(and a new length of weather strip) and it's been perfect so far.
First, I put the weatherstrip in place, and glued it to the fuselage only. I taped it in place and added a few shot bags to the wavy areas flat overnight. (The wavy areas were from the weather strip being unevenly rolled for shipping.) The next day, I could work with the windshield side without the weather strip moving around.
Next, do what I didn't do: Run a strip of blue painter's tape along the top edge of the weatherstrip. This should catch any squeezed out adhesive instead of it sticking to the window! I went along the weatherstrip, peeling it back as I ran a bead of adhesive along the bottom crease and then pressed it back into place. The next day I had a few squeeze-outs to clean up.

Windshield glue to glue weatherstrip to windshield and Nose? was created by Mac McCormick
Is there a recommended glue to use to glue the weatherstrips to the windshield and then also the weatherstrip on the bottom to the nose?
Cheers!
